Scrambled tofu with pine nuts and salad with balsamic dressing

If you're looking for a simple and healthy breakfast that fills you up and gives you energy, this recipe is a great choice. Tofu is a great source of protein, and pine nuts add a nice crunch and flavor. Just season everything, sauté it, and serve it with a fresh salad and balsamic dressing. Quick, easy, and really tasty!

Ingredients

  • 100 g tofu (half smoked, half plain)
  • 1 tsp olive oil
  • 1 tbsp pine nuts
  • 1/2 tsp turmeric
  • A pinch of black pepper
  • 1 tbsp soy sauce
  • 1 tsp nutritional yeast
  • Sesame seeds 
  • Avocado cut into pieces

For the salad:

  • Mixed greens (arugula, spinach, lamb's lettuce, or your choice)
  • 1 tsp balsamic vinegar
  • 1/2 tsp olive oil
  • A pinch of salt and pepper

Instructions

  1. Prepare the tofu: Mash the tofu with a fork, then mix in turmeric and black pepper.
  2. Toast the pine nuts: Dry-roast the pine nuts in a pan for a few minutes until lightly golden, then set them aside.
  3. Sauté the tofu: In the same pan, heat olive oil and sauté the seasoned tofu for 3–5 minutes. Add soy sauce, nutritional yeast, and sesame seeds, then cook for another minute. Stir in the toasted pine nuts at the end. Add avocado cut into pieces
  4. Prepare the salad: In a bowl, mix the greens with balsamic vinegar, olive oil, salt, and pepper.
  5. Serve and enjoy: Plate the tofu alongside the salad and enjoy a nutritious, delicious breakfast!
