Ingredients (serves 2)

For the salad:

  • 150 g (about 5 oz) salmon fillet (cooked or grilled)
  • 2 plates of baby spinach
  • 2 tablespoons goji berries (soaked in balsamic vinegar for at least 30 minutes)
  • 2 tablespoons toasted pine nuts
  • 4–5 marinated artichoke hearts (quartered)
  • Orange slices (optional, for extra freshness)

For the orange-balsamic dressing:

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 orange
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the salmon by grilling or steaming. Let it cool and break it into bite-sized pieces.
  2. Soak the goji berries in balsamic vinegar for at least 30 minutes to soften and absorb flavor.
  3. Make the dressing: In a small bowl, whisk together balsamic vinegar, Dijon mustard, olive oil, and fresh orange juice. Add salt and pepper to taste and mix well.
  4. Assemble the salad: In a large bowl, combine baby spinach, artichoke hearts, toasted pine nuts, soaked goji berries, and orange slices if using. Top with the salmon pieces.
  5. Add the dressing just before serving and toss gently
