Refreshing lavender lemonade

Lavender is a familiar sight in summer, found almost everywhere. Its name comes from the Latin lavare, meaning to wash, as it was used in ancient times primarily for body cleansing and care.

Lavender essential oil is widely used in cosmetics, especially in perfumes, soaps, and natural cleaners. It has antibacterial, purifying, and skin-soothing properties, making it highly valued in both skincare and aromatherapy.

If you have even a small garden or balcony, lavender is well worth planting. For sleep difficulties, it can be prepared as a herbal tea or a refreshing lavender lemonade, known for its ability to calm the nervous system.

For 1–2 servings you will need:

  • 2 tablespoons goji berries
  • a handful of fresh mint
  • a handful of fresh lavender
  • 1 tablespoon coconut sugar
  • 4 tablespoons fresh blueberries
  • juice of 1 organic lemon (very juicy)
  • ½ inch fresh ginger, grated (1 teaspoon)
  • 1 tablespoon fresh rosemary

Method:

  1. Squeeze the lemon juice into a glass and soak the goji berries for 10 minutes.
  2. In a second glass, add mint leaves, rosemary, lavender, coconut sugar, grated ginger, and blueberries.
  3. Gently muddle the ingredients using a fork or spoon.
  4. Add the goji berries with the lemon juice and muddle again.
  5. Let the mixture rest for 10 minutes, then strain through a sieve.
  6. Press the solids firmly to extract all the liquid and intensify the flavour.
  7. Serve and garnish with fresh mint, ginger, and lavender.
