Plum crumble is a straightforward, naturally sweet, and delightful way to use seasonal fruit. Perfect as a dessert or as a sweet snack!
Ingredients for the fruit base:
- 4 cups (frozen or fresh) plums (enough to cover the bottom of the baking dish)
- ½ tsp ground vanilla bean
- 1 tsp cardamom
- 1 tsp cinnamon
- 1 tsp ground ginger
- 2 tbsp lemon juice
- 1 tbsp maple syrup or honey
Ingredients for the crumble topping:
- 2 ½ cups rolled oats (certified gluten-free if needed)
- 5 tablespoons almond flour or millet flour (you can make almond flour by blending almonds until smooth)
- a pinch of sea salt
- ½ teaspoon ground vanilla
- 1 teaspoon cardamom
- 2 tablespoons lemon juice
- 5 tablespoons maple syrup or honey
- 5 tablespoons cold-pressed coconut oil, melted
Instructions:
1. Preheat the oven:
- Preheat your oven to 175°C and prepare a baking dish
2. Prepare the fruit base:
- If using frozen plums, let them thaw slightly beforehand. Spread the plums evenly over the bottom of the baking dish.
- Sprinkle with ground vanilla, cardamom, cinnamon, ground ginger
- Drizzle with lemon juice and maple syrup or honey. Mix well to ensure the fruit is evenly coated.
3. Prepare the crumble topping:
- In a large bowl, combine rolled oats, almond or millet flour, a pinch of sea salt, ground vanilla, and cardamom.
- Add the lemon juice, maple syrup or honey, and melted coconut oil.
- Mix using a spoon or your hands until the mixture becomes crumbly in texture.
4. Bake
- Spread the crumble topping evenly over the fruit layer in the baking dish, ensuring the plums are completely covered.
- Place the dish in the preheated oven and bake for 35–40 minutes, or until the crumble topping turns golden brown and the fruit mixture starts bubbling around the edges.
5. Serving:
- Allow the crumble to cool slightly before serving. Enjoy it warm or cold. It pairs wonderfully with coconut yogurt, Greek yogurt, or a scoop of vanilla ice cream.
